The default on the scanners is to create a PDF, which is a file format that doesn't allow insertion into another file.
To resolve this, rescanning the image, selecting 'JPG' as the file format instead or open the PDFs and 'Saved As' JPGs, then crop the image as necessary.
Either way, you will create JPGs ready to insert into a Word document just fine.
