The Reference Collection is a great place to begin gathering information. The following books might be helpful: Encyclopedia of multiculturalism (Call number 306.446 E56a) and Encyclopedia of modern ethnic conflicts (Call number 305.8003 E564 2003).
If you are looking more towards race and ethnicity there are several more encyclopedias that can be helpful: The Encyclopedia of Race and Racism is an E-Book. Encyclopedia of free Blacks and people of color in the Americas (Call number 305.896 E564 2012).
